Ahhh . . . Chicken Noodle Soup

Happy New Year, everyone!  I just wish it was a healthier start to 2022. With so many folks down with the creeping crud, it’s high time I share the best chicken soup recipe with you. As with almost all recipes, this one has a little history. The original recipe came to me from my dear friend and mentor, Mrs. Marilyn. I have adapted it over the years, and the end result is what I will share today. I made it for her and her 90-year-old hubby not too long ago, and she said they loved it. I hope she wasn’t just being kind, but she approved of the tiny changes I’ve made.  It tastes great and will really open up your sinuses!  If you try it, please let me know how you like it.

Mrs. Marilyn’s Chicken Noodle Soup

Easy and Delicious

  • Soup Pot
  • 1 Small Onion (Chopped )
  • 2 Stalks Celery (Chopped)
  • 2 tbsp Butter
  • 2-3 each Carrots (Sliced round)
  • 1 Cup Chicken, cooked (or Canned breast meat)
  • 1 Quart Chicken broth (Bought or homemade)
  • 1-2 Cups Water
  • 1 Can Cream of Mushroom Soup
  • 1 cube Chicken Bouillon (optional)
  • 2-3 Cups Narrow Egg Noodles (You can use any, just don't overcook them)
  1. Melt butter in soup pot, add celery and onion, sauté about 5 minutes

  2. Add carrots and sauté 5 more minutes

  3. Add broth, mushroom soup, 1 can of water, stir until mixed well

  4. Add bouillon if you choose to. This just adds a little more flavor

  5. Add chicken, mix well.

  6. Cook 5 minutes

  7. Add noodles and cook until carrots and noodles are soft. Add 1 more can of water at this time if you want a thinner soup.

  8. Last, taste for seasoning and add salt and pepper at this time

  1. I’m actually making Chicken Noodle Soup for tonight’s supper. I’ll be using my recipe though. I don’t have all the ingredients in this recipe, but I plan on making it at a later date. Sounds good!

    1. I’m sure your recipe is delicious. There are so many! I like this one because it’s kind of creamy. Not just watery if you know what I mean.

  3. I’m trying to post again. That soup looks so good. I had a big package of chicken breasts that I split up and cooked last night. We had a chicken/rice casserole with part of it. I boiled some and put it and the broth in the fridge for dumplings tonight and packaged some strips I sauteed in butter to use in soup or stir fry. It will go in the freezer.

    The day you posted the recipe, I had made soup either that day or the night before. Since the pandemic, we have been eating a LOT of chicken and pork. It’s the least costly items. I’m also trying to use up the older items in the big freezer since it has been making some weird noises. I pray it doesn’t go out. Seems it took about 6 weeks to get the smaller one delivered.
